Food For You to Try: Pea Salad

pea saladBefore my grandfather’s diagnosis of Dementia, he had a passion for cooking. Whenever I visited him in Florida, he was always in the kitchen creating different recipes for people to enjoy. We used to call him a Dump Cook because he had a gift of throwing whatever he could find in the fridge and the pantry together, and make a wonderful meal from it. I would like to share with everyone my Papa’s family famous pea salad because everyone in my family loves it! It’s a quick and easy recipe to follow, and I am sure others will enjoy the dish as well.

Papa’s (Tom Goodwin) Pea Salad

2 c. cooked green peas
2 boiled eggs, chopped
3-4 sweet pickles
3/4 c. diced cheddar cheese
6 sliced radishes (optional)
1/2 c. sliced celery
3/4 c. mayonnaise
1/2 tsp. salt

Combine peas, eggs, chopped pickles, diced cheese, sliced radishes, sliced celery and salt with mayonnaise. Mix well. Serve on lettuce (optional step).

Some of you are probably wondering why I had put this recipe in the Entertainment section. My reasoning? Everyone (well, mostly everyone) either loves or knows someone who loves cooking. Whenever my grandfather cooked, he never felt like it was a chore, or like it was something he was forced to do. He cooked because he loved it; he could cook for hours on end, and not get tired from it. I wish he could still cook like he used to, but he can’t because of his condition. However, even though he cannot cook anymore, he still is able to enjoy eating his creations. For many years, he cooked and served the family; now, it is our turn to return the favor by cooking for him instead.
